Rainbow Organic Salad with a side of Garden Herb Wedges



Summertime is upon us, and in Southern California that means scorching hot days that make you want to cry, and yet the produce that comes is so heavenly I choose to ignore the heat bask in the shade of my kitchen and make delicious food with the goods available.  One day after work I was in the mood for a beautiful salad and luckily I had just gone to the farmers market the day before. I had a fridge full of greens, beets, avocado, tomatoes and herbs. YUM. At the same time I had a full bag of potatoes, and a garden full of rosemary and thyme. So garden wedges were made!!
